Criolla de Cocina Pepper (Capsicum annuum): Historically known throughout Latin America as Pimiento Criollo, Criolla de Cocina is a rare and highly prized heirloom variety originating in Nicaragua and the tropical regions of Central America. Renowned for its exceptional flavour and fragrance, it is considered one of the most aromatic and flavourful sweet peppers. The fruits are distinctive for their pendulous, deeply ribbed, wrinkled and flattened shape, measuring approximately 7–10 centimetres in length. The plant has an upright, bushy and well-branched growth habit, reaching around 60–80 centimetres in height. Its sturdy stems and dense, dark green foliage support an abundant crop of fruits that gradually change from bright green to an intense, fiery red when fully ripe.
The defining feature of Criolla de Cocina lies in the exceptional quality of its flesh: thin, crisp and rich in sugars and aromatic compounds, with absolutely no heat (0 SHU on the Scoville scale). Its flavour is remarkably complex, intensely sweet and fruity, with deep earthy notes that evoke the traditional peppers grown in generations past.
In the kitchen, Criolla de Cocina is a cornerstone of Central American gastronomy and a prized ingredient for adventurous cooks around the world. In Nicaragua and across the Caribbean region, it is an essential component of sofritos and aromatic seasoning bases, finely chopped with garlic, onion and herbs to lend an unmistakable depth of flavour and fragrance to stews, rice dishes, soups and sauces. Its thin flesh and relatively low moisture content make it particularly well suited to roasting over charcoal or in a hot pan, where the skin browns readily, releasing a beautifully sweet, smoky aroma. It is equally delicious eaten fresh, finely sliced into salads or pico de gallo, or dried and ground into a superior-quality sweet paprika with a rich ruby-red colour.
In the garden, Criolla de Cocina proves to be an exceptionally hardy and vigorous cultivar, well adapted to warm, sunny climates. It displays impressive tolerance to summer heat compared with many conventional commercial sweet pepper varieties. Harvesting begins in late summer and continues throughout autumn, with fruits picked once they reach full maturity and develop their deep red colour. Regular harvesting encourages the plant to keep producing new flowers and fruits right up until the first cold spells of the season.
As a traditional, open-pollinated heirloom variety, Criolla de Cocina is a valuable addition to any seed-saving garden. Combining outstanding flavour, generous productivity and a rich cultural heritage, it offers growers the opportunity to cultivate a distinctive Central American pepper while helping preserve traditional vegetable diversity for future generations. By saving seeds from their own plants, gardeners can continue this living tradition and keep this remarkable variety in cultivation year after year.
