Red Cob Corn (Zea mays): historically known throughout the rural areas of the southern United States and the Appalachian territories, it is an ancient and robust heirloom dent corn variety, indissolubly linked to the history of American agricultural and rural survival. The story of this variety is a true hymn to botanical resilience: during the devastating and prolonged droughts that struck rural areas of the North American continent between the late nineteenth century and the first decades of the twentieth century, when early commercial shallow-rooted varieties and other crops withered relentlessly beneath the scorching sun, Red Cob saved entire communities from hunger. Thanks to an exceptionally deep root system, capable of reaching deep into the soil in search of the smallest trace of moisture, and to a genetic heritage forged to withstand thermal stress, its tall stalks remained green and vigorous, continuing to produce viable ears when everything else failed.

This variety takes its name from its most fascinating characteristic: a sturdy central cob of a vibrant crimson red, bearing regular rows of large, pearly kernels, usually pure white or cream-coloured, creating a spectacular contrast when the ears are shelled.

The plant develops a majestic and imposing structure, with thick stalks that can easily exceed two and a half metres in height, producing generous ears tightly enclosed by thick green husks that effectively protect them from insects and make them less prone to fungal infestations such as those caused by Aspergillus flavus.

In cooking and rural tradition, this cultivar possesses a remarkable versatility that made it a staple of the farming diet. Although the young ears can be harvested at the milk stage and roasted over the fire or boiled, offering a rustic, earthy flavour that is less sweet than that of modern sweetcorn, the true vocation of Red Cob emerges when the grain is dried. Shelled from its characteristic red cob, the grain is ground into high-quality coarse flours, indispensable for making cornbread and rich, full-flavoured polenta. Historically, owing to its exceptionally high and valued starch content, this cultivar was also a favourite for the traditional fermentation and artisanal distillation of the classic whiskeys and bourbons of the mountain regions.

In the field, it proves to be an extremely vigorous cultivar, legendary for its adaptability and tolerance of water scarcity.

The harvest intended for milling takes place in late autumn, when the entire plant turns yellow, the husks become papery in texture and the white kernels reveal their hard, glassy consistency, ready to be separated from that blood-red cob that represents a true piece of agricultural history.
